About Our Hogs: Red Wattle (Heritage Breed)
Our hogs are Red Wattle, a heritage breed that originated in the United States. They’re named for their deep red color and the distinctive paired wattles (tassels) that hang from the neck.
-
Conservation status: Listed as Threatened by The Livestock Conservancy (formerly ALBC).
-
Why we raise them: Red Wattles are hardy foragers that thrive on pasture and are known for rich, well-marbled, flavorful pork. Choosing a herd share helps preserve a rare American breed while supporting ethical, pasture-based farming.

WHY A HOG SHARE SAVES YOU MONEY
Buying a share of the whole animal gives you one fair, blended price across premium cuts (chops, bacon, tenderloin) and staples (roasts, ribs, ground). Compared to typical heritage/pasture-raised retail, this basket usually saves about ~17% while supporting whole-animal butchery and humane, pasture-raised production.
QUARTER HOG — SAVINGS EXAMPLE
• Typical take-home: ~38–40 lb packaged (example: 38.1 lb)
• Comparable retail average: ~$14.03/lb across heritage/pasture cuts
• Blended share price (example basis): ~$11.66/lb effective
• Example math: 38.1 lb × $14.03 ≈ $535 retail vs. 38.1 lb × $11.66 ≈ $444 share
• You save: about $90 (~17%)
NOTES ON WEIGHT & VARIANCE
• Savings vary with your cut sheet and curing choices (smoked bacon/ham lose water weight and some processors add per-lb cure fees).
• Actual packages depend on bone-in vs. boneless, roasts vs. grind, and smoked vs. fresh.
• Freezer space: ~1–1.5 cu ft for a quarter, ~3–4 cu ft for a half, ~6–8 cu ft for a whole.
HOW WE PRICE (TRANSPARENCY)
• Whole-animal, fair blend: Premium cuts are averaged with value cuts, so you don’t pay “steak prices” for everything.
• Pasture-raised heritage costs: Red Wattle hogs grow slower and develop richer flavor; pasture management, supplemental feed, and humane handling are built into the price.
• Processing included: Humane harvest, transport, inspected processing, custom cut/pack, vacuum sealing, and labeling are accounted for (curing/smoking may carry a processor fee).
• Share size & overhead: Smaller shares have a bit more handling per pound (admin, packing, pick-ups); whole hogs get the best effective per-lb value.
• Nose-to-tail value: Choosing bones, hocks, leaf lard, and jowl increases real-world meal yield and cooking options.
